Amy Pelham, the
Deli Coordinator for the Community Food Coop's Swan Cafe, has been
cooking professionally for almost 20 years. Before her arrival in
Bellingham four years ago, she cooked in many of the finest 3- and 4-star
restaurant and hotel kitchens in Seattle. Amy uses her classes as a way
to combine her personal interest in great vegetarian food with an
affinity for vibrant international flavors. Simplicity, ease of
preparation, and clean flavors are the trademarks of her cuisine, which
always celebrates local, seasonal ingredients. Amy served for four
years as formal apprentice chef to Bruce Livingston.
Amy spends her leisure time cooking for her family and friends,
playing with her dog, Betty, and browsing book shops for old
cookbooks and texts. A childhood in beautiful but remote Southeast Alaska has
left her convinced that Bellingham is the "next best thing to paradise."
