The Mexican Kitchen: Salsas and Tortillas!
 
Hold on to your sombrero! This class will inspire you to stock your pantry with an array of home made salsas bringing exciting flavors to your everyday menus. Presented by Ana Cecilia Dominguez Jackson, you will learn to make Salsa Fresca (pico de gallo); Salsa Verde (green salsa great for dipping, cooking and basting); Salsa Negra (rich, dark, smoky and made with dried chile pods); Salsa Asada (rustic, full of flavor and great to pair with grilled beef); and Chipotles en Escabeche (a fusion of sweet, tangy, and smoky flavors). If that's not enough, you'll taste test these salsas with warm corn tortillas made right before your eyes! Class is held at Pacific Chef in Fairhaven.

Celebrations--An Easter Brunch
Devoted to the Easter table, this class is a sensory experience designed with this festive holiday in mind. Instructor Cindy McKinney will prepare mimosas to sip on as you sample a stunning shrimp bisque, pesto deviled eggs, an asparagus and parmesan risotto, bourbon and brown sugar glazed ham, and hazelnut cheddar biscuits. Leave inspired to treat your friends and family to a spring feast they will long remember. Class is held at Pacific Chef in Fairhaven. Session is closed.

The Mexican Kitchen: Aperitivos!  (New Recipes)
The Mexican Kitchen returns to Pacific Chef! You are in for a treat of delicious aperitivos (appetizers) perfect for your next gathering of friends or family. Presented by Ana Cecilia Dominguez Jackson, you will sample authentic starters: Champiñones al ajillo--a classic appetizer of sautéed mushrooms in a peppery garlic sauce; Tacos gobernadora--handmade corn tortillas stuffed with bay shrimp and Oaxaca cheese; Chilitos Ensenada Style--sweet peppers stuffed with salmon and capers; and, back by popular demand-Empanaditas del Mercado (Farmer's Market turnovers) with pico de gallo. Class will be filled with the great flavors of a Mexican kitchen and colorful stories of Ana's native culture growing up in Mexicali, Baja California. Class is held at Pacific Chef in Fairhaven.

Trader Joe's in Your Kitchen!
When Trader Joe's opened its doors last fall, Whatcom County residents stormed the aisles seeking their favorite products. In this lighthearted class, Cindy McKinney, a passionate Trader Joe's shopper, showcases some of the store's best selling products as she cooks up a storm! Taste-test her focaccia with caramelized onions and fontina, a wild mushroom risotto, a show-stopping pasta saute, and a stunning dessert plate featuring wine-poached figs, dried fruits, nuts, and artisan cheeses. Expand your menus for friends and family as you discover the hottest items at this popular grocery outlet! Class is held at Pacific Chef.

Fresh Soups from the Garden
Spring has sprung! What a perfect season to create delicious soups that are quick and easy to prepare--great for entertaining or even for a picnic basket! Using the bounty from our Northwest gardens and sea, instructor Cindy McKinney will present delicious soups for your enjoyment: a south-of-the border chilled avocado and tomatillo soup; a memorable crab and red pepper bisque; an asparagus, wild rice, and pancetta soup; and a refreshing strawberry/honey chilled soup. Cindy will also review the basics of making delicious stocks, the building blocks for soups and beyond. You will go home with an incredible selection of recipes and inspiration to include fresh soups in your spring menus. Class is held at Pacific Chef in Fairhaven.

Celebrations: Bridal and Baby Showers
 
Springtime means celebrations! This class is all about creating an elegant, yet simple-to-prepare menu for showers or any spring party. Instructor Cindy McKinney will present a Northwest seafood salad served in chilled martini glasses, Italian kebobs skewered with fresh basil, marinated mini-fresh mozzarella balls, cherry tomatoes, and sausage that will be the hit of your party, build-your-own Asian lettuce wraps with assorted fillings and toppings, and lemon tarts topped with fresh berries. Also receive great ideas for fun party drinks as you sip on one of Cindy's favorites, and learn how to plan ahead to make your shower stress-free, giving you time to enjoy your guests. Come hungry and leave with a recipe repertoire to impress friends and family for special occasions of any kind! Class is held at Pacific Chef in Fairhaven.

Luscious Lemons  (New Recipes)
Springtime is lemon time! Join our chef for the evening, lemon-lover Cindy McKinney, and experience the versatility of this sunny, yellow citrus gem. She will demonstrate the lemon's many uses in your kitchen as she presents for your sampling all new recipes: an orzo salad with roasted veggies in a tangy lemon dressing; a salmon piccata showcasing fresh lemon flavors; a lemon risotto with chives; and on the sweet side--quick (but stunning!) lemon parfaits in puff pastry...all while you are sipping on a refreshing ginger-lemonade. Learn the ropes for making the perfect panini as Cindy McKinney brings this popular sandwich to Pacific Chef in ways you have yet to experience! She will unveil for your tasting enjoyment a trio of panini sandwiches: a grilled turkey/bacon/arugula/gorgonzola; a portobello/spinach/grilled red onions with pesto mayo; and a chicken breast/fresh basil leaves/roasted red peppers/fontina with sundried tomato aioli. In honor of the season, instructor Ana Cecilia Dominguez Jackson returns to Pacific Chef to combine the catch of the day with the flavors of Mexico! She will showcase a trio of her favorite seafood dishes: Puerto Vallarta-style halibut tacos with an achiote marinade, Tostadas Ceviche, and San Felipe-style shrimp cocktails. Pesto Irresistibile!  (New Recipes)
Explore the wonderful world of pesto ("paste" in Italian)! This class is dedicated to demonstrating the versatility of this popular Italian herb paste. Back by popular demand, instructor Cindy McKinney will present all new recipes as well as the traditional basil/pinenut classic. You will learn how to make the perfect pesto, use it in recipes you'd never dream of, and freeze it effectively so you can enjoy its amazing flavor all year long. Cindy's new herb blends include an Asian pesto, an Italian parsley and toasted pecan pesto, and an incredible artichoke and lemon pesto--perfect for an array of spring dishes. You will taste-test delicious recipes showcasing these pestos: pesto/brie fondue, an Asian pesto shrimp saute, chevre and pesto-topped crostini, and a chicken pasta salad with toasted pecans--all perfect for your spring and summer entertaining.
