The Willows Inn: Farm to Table Summer Feast
 
Escape to picturesque Lummi Island and experience Chef Craig Miller's culinary creations as you enjoy the ambiance of the Willows Inn. Come early and make a day of it exploring the Island or stay overnight at the Inn after enjoying the lingering light of a midsummer's evening. Class begins with a tour of Nettles Farm where Chef Craig creates his menus after a stroll with the farmer each week. He will introduce you to this local, organic farm as he picks fresh items that will be incorporated into the evening's meal. You will then return to the Inn for a pre-dinner gathering of appetizers and great conversation on the front deck. Next, on to the dining room for a sumptuous four course dinner showcasing fresh local ingredients from Nettles Farm and Puget Sound waters: Craig's Reefnet salmon and dill ceviche, crisp oysters on a hearty summer salad, Lummi Island braised beef, and a glorious classic creme brulee. During dinner, Craig will talk about each featured dish and his philosophy of cooking with organic, seasonal ingredients. Please note: Alcoholic beverages are not included in class fee but will be available for purchase during the evening. Picture ID required.

Tropical Patio Party
 
Bring the essence of the tropics to your backyard summer gatherings with a menu that will make you and your guests dream of warm breezes. Sip on a pineapple lemonade spritzer while enjoying this crowd-pleasing menu: roast pork with a tangy lime sauce, ginger garlic shrimp with sticky rice, a fresh spinach salad with a sesame dressing, and a yummy coconut-banana bread pudding. Instructor Nicole Lee is a passionate and accomplished cook who specializes in Korean cooking and tropical fusion fare. Class is held at Pacific Chef.

The Picnic Basket: Light, Luscious and Gluten-Free!
 
The warm days of summer are just around the corner, and that means packing your picnic basket for a day at the park or the beach! But what if you or someone you know is celiac or gluten-intolerant? In this class, Dr. Jean Layton, chef and naturopathic physician, will present recipes that are gluten-free, casein-free, low in fat, and oh so tasty--perfect for your summer outings. Her menu: a lovely lemony tofu spread with chickpea-sesame crackers, a poached salmon salad with dill mustard sauce over leafy greens--complete with gluten-free bread croutons, and the sweet ending--luscious chocolate meringue sandwiches served with raspberries and seasonal fruits on the side. Kelle Rankin-Sunter of the Bellingham Gluten Intolerance Group will join Dr. Jean for a great discussion of delicious picnic fare for gluten-free living. Class is held at Pacific Chef.

Ladies Who Lunch
 
The summer season is renowned for ladies gathering to "do lunch" as they celebrate special occasions together (showers, weddings reunions, etc). In honor of this season, instructor Nicole Lee has created a menu that will have your luncheon the talk of the town: avocado/bacon lettuce cups, creamed broccoli soup, grilled chicken salad on fresh baguettes, and the sweet finale--raspberry crescents with lemon curd. Nicole is a passionate and accomplished cook who specializes in Korean cooking and tropical fusion fare. Class is held at Pacific Chef.

The Mexican Kitchen: Catch of the Day
 
Summer is the season of bountiful seafood in the Pacific Northwest. In honor of the season, instructor Ana Cecilia Dominguez Jackson returns to Pacific Chef to combine the catch of the day with the flavors of Mexico! She will showcase a trio of her favorite authentic seafood dishes: Baja-style fish tacos served with two fresh salsas, a stunning mango shrimp ceviche, and Pescado a la Veracruzana (red snapper in a tomato/olive/bell pepper sauce). Her selected recipes are sure to be crowd pleasers at your summer gatherings! Class is held at Pacific Chef in Fairhaven.

Ana presents a trio of authentic Mexican recipes showcasing the fresh-from-the-garden produce so abundant this time of year. If you love the flavors of Mexico AND summer produce, this class is your dream come true! You will sample a jicama/black bean/corn salad, a tomatillo and pico de pajaro (chile) salsa, and Tabule con Aguacate (tabouli/salsa-stuffed avocados). The sweet ending is one of Ana's favorite childhood treats: a beautiful fresh fruit treat of pico de gallo --a mixed salad of tropical fruit, including oranges, jicama, cucumber, watermelon, mango, coconut, and pineapple topped with lemon juice and chile powder. Cooking in Season--Fresh From the Garden

This innovative cooking course returns for a spring celebration, bringing together two of Whatcom County's culinary treasures: Mary Ellen Carter, food columnist and popular cooking instructor, and Joe's Garden, Bellingham's legendary local farm. Class will first meet at Joe's Garden on Bellingham's Southside, where you will stroll through the garden with Mary Ellen and learn about her philosophy of cooking in season as she selects fresh produce during the tour. Then it's off to the Sehome kitchen where she will create delicious, seasonal dishes with vegetables in the spotlight! Featured recipes for the evening: a gingery carrot soup; farro--a Tuscan wheat berry--with green onion sauce and roasted radishes; focaccia bread with proscuitto, spinach, rosemary and feta cheese; tender spring greens and herbs with baked goat cheese; and a delicious baked rhubarb with vanilla bean. You will also learn tips for using fresh herbs to accent any meal. Mary Ellen Carter is the author of the widely acclaimed cookbook, At Joe's Garden. Class begins at Joe's Garden promptly at 6:00 PM for the garden tour and then moves to Sehome High School.

Join our panini party and find out why you will find this scrumptious sandwich worldwide, from Australia to Italy to the shores of Bellingham Bay! Learn the ropes for making the perfect panini as Cindy McKinney brings this popular sandwich to Pacific Chef in ways you have yet to experience! She will unveil for your tasting enjoyment a trio of panini sandwiches: a grilled turkey/bacon/arugula/gorgonzola; a portobello/spinach/grilled red onions with pesto mayo; and a chicken breast/fresh basil leaves/roasted red peppers/fontina with sundried tomato aioli. If that's not enough, a sweet surprise panini will mark the finale! Your family will love you for bringing this tasty sandwich into your menus, so don't miss this party. Pesto Irresistible!
Explore the wonderful world of pesto ("paste" in Italian)! This class is dedicated to demonstrating the versatility of this popular Italian herb paste. Back by popular demand, instructor Cindy McKinney will present all new recipes as well as the traditional basil/pinenut classic. You will learn how to make the perfect pesto, use it in recipes you'd never dream of, and freeze it effectively so you can enjoy its amazing flavor all year long. Cindy's new herb blends include an Asian pesto, an Italian parsley and toasted pecan pesto, and an incredible artichoke and lemon pesto--perfect for an array of spring dishes. You will taste-test delicious recipes showcasing these pestos: pesto/brie fondue, an Asian pesto shrimp saute, chevre and pesto-topped crostini, and a chicken pasta salad with toasted pecans--all perfect for your spring and summer entertaining. Simply Salads

The arrival of balmy weather is just around the corner, making this the perfect time of year to learn how to prepare fabulous entree salads. From light and lively to exotic, main course salads are satisfying, healthy, and sure to please family and friends. Instructor Cindy McKinney will showcase all new recipes as she presents a special occasion lobster Cobb Salad, an Italian potato salad with artichokes and green beans in a champagne and shallot vinaigrette, a spicy Thai steak salad, an apple/Manchego cheese/almond salad on a bed of arugula, and a spring salad of mixed baby greens and fresh berries with an orange/cumin vinaigrette--sure to please all palates. Class is held at Sehome High School.

The Mediterranean Diet--Healthy & Fabuloso!
 
The Mediterranean diet is known for being one of the healthiest in the world, bringing vitality and longevity to the many cultures bordering the Mediterranean Sea. Hallmarks of this diet are the healthy oils, seafood, and generous amounts of fresh fruits and vegetables. Instructor Cindy McKinney pays tribute to the Mediterranean diet as she showcases for your tasting enjoyment: figs and manchego cheese with a caramelized wine and honey drizzle; an arugula and mint salad with orange slices and Spanish olives; a delicious shrimp bake with Italian tomatoes, fresh herbs and feta; and for dessert--a tangy lemon gelato. You will leave class inspired to bring tastes of the Mediterranean into your everyday cooking! Class is held at Sehome High School.

Cooking with Fresh Herbs

Spend an evening with Mary Ellen Carter and learn all about growing, harvesting, storing, and--most of all--incorporating fresh herbs into your menus to bring incredible flavors to your table. Discover which herbs to plant (June is not too late to start herbs!) as you learn about distinct types of culinary gardens inspired by Italian, Asian, Greek and French herbs. Her menu for the evening will showcase fresh herbs at their very best: summer greens with classic Green Goddess dressing (sour cream, chives, tarragon), herbed soup with porcini broth, poached salmon with cucumber and dill, roasted baby potatoes with tarragon aioli, and minted fruit with blueberries. Also learn about the combinations of herbs in the famous Herbes de Provence, a bouquet garni, as well as how to concoct herbed compound butters. Bring your questions, an appetite, and a curiosity for how cooking with fresh herbs can change the way you cook all year long! Class is held at Sehome High School.

Canning 101
With summer just around the corner, this is a great time to learn how to preserve the fresh flavors of the harvest through water bath canning. Fruits, pickles, tomatoes/salsas, jams/jellies, fruit butters--you CAN(italics) can them all! In this class for beginners, learn the basics of canning from veteran food preserver Kelle Rankin-Sunter, as she demonstrates proper canning practices with an emphasis on safe and healthy techniques. Learn how satisfying canning can be--and what a great way to save the bounty of the season. Kelle invites anyone interested in learning the art of water bath canning to join her for this lively, fun and highly practical evening. Class is held at Sehome High School.

Culinary Road Trip: Taste of India Guided Tour--Surrey, B.C.
Spend a day exploring the Indian side of Surrey, B. C. with our popular cooking instructor Valerie Viegas. Enjoy a guided tour of the area, rich in both culture and the flavors of India. We will first visit a clothing store to experience the stunning fabrics and styles of Indian dress, then head to the mall area to visit stores featuring beautiful 24K gold jewelry, shawls, apparel, and more. From there we will move on to a guided lunch experience at one of Valerie's favorite haunts--Mehfil, an authentic Indian buffet-style restaurant. Our last stop will be an Indian grocery store, where we will immerse ourselves in the world of exotic spices and ingredients central to Indian cooking. We will leave from our rendezvous point at the WCC campus promptly at 9:00 AM and travel by relaxing coach furnished by our day trip partners, Bellair Charters. Lunch cost is not included in class fee. Proper border identification papers must be shown before boarding bus.

Culinary Road Trip: Seattle's International District & Pike Place Market
Don't miss Mary Ellen Carter's summer road trip combining two reknowned Pacific Northwest locales into one big day! Our bus heads south to our first stop--Seattle's historic International District. You will experience this lively and colorful urban neighborhood filled with fascinating shops, restaurants and gardens. Mary Ellen will take you on an in-depth tour of Uwajimaya--the premier Asian specialty supermarket--as she shares her passion for Asian cooking. Then on to Kobe Terrace Park and Danny Woo Community Garden to see how local residents farm the land in this urban setting. Lunch will be on your own as you choose one of many fabulous Asian restaurants in the International District (with recommendations from Mary Ellen). After a delicious lunch, it's off to Pike Place Market for an afternoon of free time to shop and enjoy all that the market has to offer! Class departs from the WCC campus promptly at 8:30 AM and travels by relaxing coach furnished by our day trip partners, Bellair Charters. One hour lunch break provided.
